Course Description

This course is aimed at Messman, covering knowledge and practical skills required to become a recognized Messman.

Course Content

On successful completion of the course, delegates will be able to:

  • Understanding of Toolbox Meetings / daily briefings and Permit to work systems
  • Application of safe working practices in the bakery and stock control
  • Apply practical food safety, sanitation and hygiene
  • Correctly use waste management and disposal systems and follow MARPOL garbage disposal requirements
  • Comply with workplace health and safety practices
  • Assist the Chief or Second Cook to prepare meals and supervise the galley area
  • Understand basic cookery skills
  • Provide stewarding service to officers at mealtimes
  • Deliver general housekeeping and laundry services
Entry Standards

Basic Training certificate, completion of local training – NC II.
